I realized we had too many apples in the fridge that were not getting eaten. Frequently I chop up fruit and veggies and throw them in the freezer. We can use them for stir fry recipes, sauces, soups and ( most likely ) my smoothies.
While I was cutting them up magically the boys want to eat them.
I decided a quick dessert my mother in law mentions often would be perfect. Baked apples with cinnamon and sugar. We happened to have heavy cream on hand too. I love making homemade whipped cream

I preheated the oven to 375 – tossed a few handfuls of apples into a ziplock bag, dumped in some cinnamon and sugar and had the 10 yr old shake the bag. He was slightly annoyed that I made him help…. He enjoyed greasing the baking dish and dumping in the apples. I drowned out the intermittent complaining and yums (from licking his fingers) with the sound of the hand mixer. A pint of heavy cream and about a cup of powered sugar whips up into whipped cream rather quickly on medium speed…
The best sound I heard all night was “Mom. Is there more?”
